Cinnamon Raisin French Toast & Caramelized Peaches


The past few weeks have been incredibly busy! I'm working part time at two jobs, nannying in between those and taking a Spanish class! Needless to say, finding time to make myself really delicious meals has been a challenge. 

I decided to wake up fifteen minutes early to make myself breakfast and this is what came out of it!


It was really good and really quick, so I thought I'd share how to make it!

It's your basic French toast recipe, made with cinnamon raisin bread.

2 eggs
2 tablespoons milk
2 slices cinnamon raisin bread
1 dash apple pie spice
1 tablespoon butter

1 small or medium sized peach, sliced
2 tablespoons sugar

Cinnamon, powdered sugar and whipped cream to taste

Beat the eggs and milk together until they are a pale yellow color. Whisk in the apple pie spice.  Start heating up the butter in a saute pan. One slice at a time let the bread soak in the mixture for 30 seconds on each side. Fry the bread in the butter until the centers are firm (careful not to overcook it!). 

To caramelize the peaches add the sugar into the saute pan (you may need to add a little more butter). Let it cook for about thirty seconds. Then add in the peach slices, let them get some color on each side and soften up and then remove them from the pan.

To serve, dust the toast with powdered sugar, top with the peaches, whipped cream and a sprinkling of cinnamon!
